1- how to publish / unpublish (lot of products in one go) .?
2- how to change category (inventory/website) in bulk?

This can easily being acheived with 2 additional addons (configured).
First step always is to select multiple products by any criteria you want. i.e by code or by category.
Second step is selecting products, its typically easier in list view.
Third step is to pick right operation from Actions
